Ingredients
- 2 cups buttermilk.
- 2 egg yolks.
- 1 ½ teaspoon salt.
- 2 tablespoons shortening.
- 1 teaspoon baking powder.
- 1 teaspoon soda.
- 1 cup corn meal.
- 1 cup white flour.
- 2 egg whites.
Instructions
- Sift flour, baking powder, soda, and salt.
- Beat yolks, buttermilk, and dry ingredients.
- Beat until smooth.
- Add melted shortening and mix well.
- Fold in stiffly beaten egg whites.
- Bake on a hot griddle.
- Yields approximately 8 medium-sized cakes.
